21 Gourmet Dumpster Meals

Imagine living out of supermarket dumpsters for a whole week by turning the food waste into healthy, gourmet meals. That’s exactly what I did with my 21 Gourmet Dumpster Meals project. I did this while focusing attention on the amount of food that goes to waste in the United States (estimated at $165 billion annually) while providing tips people can use to eat ethically, healthfully and in a sustainable way. The goal of the project was to demonstrate that I could eat more deliciously and nutritiously from dumpsters than the average US American does from the supermarket aisles. In the project, I filled an entire fridge and a few cupboards, provided food to people on the streets, and made a hugely delicious and nutritious meal for friends and the public, all from food found in dumpsters!
